Terroir: Shale with sandstone schist.
Yield: 16 hectoliters/hectare
Winemaking: Upon receipt, the harvest is destemmed, then macerated by infusion for 4 weeks. Pressing (pneumatic) then placed in oak barrels of 2 wines for the aging of 36 months. Blending and bottling: November 2021. Without filtration and without added sulfates.
Service: Serve at 14-16 degrees Celcius. Food pairing: Red meats, cheeses, and game.
Analyses: Alcohol: 15.66% Vol // Acidity tot: 4.22 gr/l // Acidity Vol: 0.89 gr/l // Total S02: 20mg/l (natural).
