GENERAL INFORMATION
Grape: 100% Merlot
Soil types: The vineyards are located on deep soils on the edge of the Camargue. The soils are sand-dominant.
Vineyard management: The wire-trained vines are given drip irrigation in the spring because the soils drain well. The grapes are picked by machine.
Winemaking: After the grapes are picked by the machine at night, they are destemmed and then undergo cold pre-fermentation soaking. Yeast inoculation promotes rapid fermentation at 23°C. Juice is extracted through 2 to 4 rack-and-returns followed by short post-fermentation soaking lasting 2 to 3 days, then aging in stainless steel tanks. The wines are bottled rapidly after the winemaking process and transferred under a blanket of inert gas, in an oxygen-free environment. The wine offers up varietal aromas of fresh fruits.
