GENERAL INFORMATION
SOIL: sandy, very loose and poor in organic substances, alluvial, rich in stone and potassium with steep slopes. A mix of two different parcels of dense mature vines.
GRAPES: syrah
WINEMAKING/REFINEMENT PROCESS: Some grapes are destemmed while others are left as a whole bunch. Natural fermentation in steel containers and no longer than 10 days of maceration. Malolactic fermentation is carried out in large truncated French oak barrels from various (nearly exhausted) passages, stirring the noble lees. Matured in large casks for at least 8-10 months. bottled without clarification or oenological additives, except for small doses of sulfur dioxide.
WINE: dark ruby with sparks of violet, blackberry, and dark berried fruits aromas with decisive hints of balsamic and spice. It is as tight as it is light and complex, with intriguing echoes of black pepper.
